My Famous Apple Pie Recipe
3 cups shredded granny smith apples (usually 3-4 apples depending on size)
1 stick of butter
1 1/4 cups sugar
1 large egg
2 tablespoons cornstarch
2 tablespoons cinnamon (or to taste)
1/4 teaspoon nutmeg
1/8 teaspoon salt
Preheat oven to 350 degrees.
Peel and core your apples. Run them thru a food processor with a grating attachment (slower speeds seems to work best). The goal is to make the apple look like shredded cheese. Make sure and catch all of the juice in a bowl, and set aside.
Melt the butter in a 2 quart saucepan and remove from heat. Combine butter, sugar, egg, cornstarch, cinnamon, nutmeg, and salt - stir until well blended. Remove the apples from the bowl, and squeeze the juice from them back into the bowl. Add (dry) apples and 1/4 cup of the juice into the saucepan, and mix well - make sure everything gets coated. Drink the rest of the apple juice - boy! that stuff is tart!
I take a pre-made all vegetable pie shell and line a baking dish with it, sizing it to fit. Pour the yummy pie filling into the shell.
Put some kind of topping on the pie - I always make a crumbly topping.
1 stick of butter (softened)
1/2 cup of sugar
1/2 cup of brown sugar
1 cup of pre-sifted flour
1 tablespoon cinnamon (hey I like cinnamon ok!)
Mix the ingredients well with a fork until you get a bunch of little balls, you may have to add a bit of sugar or flour depending on what the mixture looks like. Don't beat this!!! Pour the balls on the pie and lightly smooth them over the whole pie.
Cook for 75 minutes or until golden brown. I usually rotate the pie halfway through the cooking time to even the browning.
Turkey Noodle Bake
1 (1 lb) package of wide egg noodles
6 tablespoons butter
2 cans of cream of chicken soup
1 1/2 cups milk
1 lb grated cheddar cheese
2 carrots (diced)
1/2 cup mushrooms
4 cups chicken or turkey
1 teaspoon salt
1 teaspoon pepper
Breadcrumbs
Preheat oven to 350 degrees.
Cook noodles and drain. Melt butter, soup, milk and cheese over low heat. Stir often until cheese melts and mixture is smooth. Combine noodles, cheese sauce, carrots, mushrooms, meat and spices. Stir until everything is well coated. Pour into a 9x13 baking dish, sprinkle on a layer of breadcrumbs and bake for 30 minutes.
